Cast Iron Cheesy Tempeh Shakshuka

When you get bored of the simple egg shakshuka try different proteins like tempeh! Its an amazing whole food protein that has amazing nutritional benefits such as being a fermented food that is amazing for your gut flora. It is also an amazing amount of fiber in one serving!

 

Ingredients:

2 Tablespoons of Olive oil

Half Package of Tempeh Sliced thin 2 x 2 inches 

1 onion 

2 cloves of garlic minced

4 on the vine soft tomatoes small dice

Tablespoon tomato paste

Sweet Paprika 

Cumin 

Chili Powder 

1/2 cup any cheese preference( I used Mozzarella )

Parsley for Garnish

 

Directions:

Preheat oven to Broil

Tempeh:

1. In a cast iron grill spiced tempeh with the following spices and grill with olive oil. Set aside and prepare sauce.

Sauce:

1. In a cast iron on medium flame pour 1 tablespoon of olive oil and cook onions and garlic until translucent.

2. Add in tomatoes and cook for another 4 minutes and add in tomato paste and spices according to tasting . Add salt. Sprinkle with cheese and broil until cheese bubbles. Pay close attention so cheese doesn't

 

burn !
