Meatballs are a traditional recipe and its usually a spaghetti and meatballs recipe traditionally used in Italian dishes. This is basically a sweeter tastier meatball that you can use with simply anything. From noodles to veggie noodles, wraps, lettuce cups. I dressed these meatballs with a basic tomato sauce that I will save for another post. Some added crunch with matchstick carrots. Sometimes easy and simple recipes are just the way to go- pretty much the tastiest
1 pound ground chicken
1 onion small dice
2 cloves garlic minced
2 tablespoons Parsley minced
1 tsp cumin
salt and pepper to taste
1 small sweet potato pealed
Preheat Oven to 350f
1. In a pot bring water to a boil and add in sweet potatoes. Cook until potato is soft and fork is easy to go through. Strain - mash and set aside.
2. In a saute pan saute onion and garlic in olive oil until translucent. Add salt and set aside to cool.
3. In a medium mixing bowl add in chicken, onion mixture, mashed sweet potato,cumin parsley, 1 egg,salt and pepper to taste. Mix well with hands.
4. On a lined sheet tray scoop with a ice cream scooper (2oz) of chicken mixture. Bake Meatballs for 12-15 minutes until center is cooked being careful not to overcook and dry out.
