Passover Lemon Coconut Cookies

 Passover seems so overwhelming between cooking, cleaning and still managing our daily life schedule. Us supermoms always seem to manage to make it through the week and this year happens to be the easiest year of all. The holiday falls on the same week and BONUS to us on shabbat! I am so happy to sit back and relax this holiday but always with some favorite snack options in my freezer, thats of course if it makes it to the freezer. Heres a yummy chewy cookie recipe that gives a sweet, sour crunchy kick you might crave. A clean refreshing cookie to satisfy your holiday. Be sure to tag me in all your FF creations!

 

Honey Lemon Cookies with Coconut

 

 

Ingredients

2 cups almond flour

½ cup maple syrup

1 lemon zested

½ lemon juiced

½ tsp baking soda

1 egg

Large coconut flakes to top

 

Directions

  1. Preheat oven to 350 F.

  2. In a bowl mix all ingredients and form into balls on a sprayed parchment paper. Press down cookies with coconut flake pieces. Bake for 10 minutes being careful not to burn the bottom.
