Grilled Salmon over Cauliflower Fried Rice

Ingredients
1lb salmon cut into four
sesame seeds
salt
pepper
lemon juice
maple syrup for brushing
2 cups cauliflower rice
half cup broccoli florets cut small
1 small onion small dice
2 cloves garlic minced
handful shredded carrots
1 tablespoon soy sauce or liquid aminos
1 teaspoon rice vinegar
1 tablespoon sesame oil
1 Tablespoon sesame seeds toasted
Directions
1. Sprinkle sesame seeds , salt , pepper on salmon. Brush all sides with maple syrup. Heat a flat nonstick griddle with olive oil. Wait until olive oil is hot and sear fish on all sides depending on doneness preference. Towards the end take pan off of fire and squeeze lemon juice on top. Set aside.
2. In a saute pan heat olive oil and saute , onion garlic and cook until translucent. Add in cauliflower rice and cook for another 3-4 minutes. Add in soy sauce, rice vinegar, sesame seeds , broccoli, carrots. Cook for another 4 minutes until everything is well blended. Towards the end toss sesame oil off flame. Enjoy these two dishes together or mix and match with other sides!
