Lemon Poppy Seed Almond Muffins
Lemon and Poppy is my favorite combo especially the tartness from the lemons and the freshness as well. The poppy seed adds a texture to the muffins. Perfect for breakfast or snack you'll keep going back for more. I love telling my clients who struggle with snacks to always keep a favorite item in their freezer and keep switching it up every week with new recipes.
Yields 12 muffins
Ingredients:
2 1/4 cup almond flour
1 tsp baking powder
1/2 tsp baking soda
1 lemon zested
1 /2 lemon juiced
2 eggs
1 tbsp almond milk
1/4 cup honey
1 tsp vanilla extract
2 tbsp poppy seeds
Directions :
Preheat the oven to 350f
Spray a silicone muffin tin
1. Mix all the dry ingredients : flour, soda, powder, poppy seeds, zest. whisk and create a well in the center. Mix all the wet ingredients in the center: lemon juice,honey,vanilla, eggs, milk. Whisk wet and slowly incorporate the dry ingredients. Mix well and pour muffin tin 3/4 full they will fluff slightly.
2. Bake for 15-20 minutes till firm and switch levels in oven in between.
