Eggplant Pizza


Cauliflower and chickpea nowadays is pretty much a gluten free , grainless substitute to crusts , pastas, and even creamy vegan sauces. I'm not such a fan of the cooking process of these ingredients only because it's so time consuming when you're trying to juggle work, family, errands etc. These are pretty much a 1-2 step pizza that can be done in half hour baking time and prep. Yeah its that easy! Plus I have a Organic Paesana Marinara sauce that you can find that has all organic vegetables no sugar added! Shocking huh?

Try these pizzas and get your teens to dig in to, eggplant means crunchy crust perfection!

INGREDIENTS:

YIELDS 1 SERVING

1 medium eggplant half peeled and round medium to thin slices

1/2 cup marinara sauce or your favorite sauce

1/3 cup Part skim Mozzarella Cheese

Salt

DIRECTIONS:

1. Preheat the oven to 400f

2. On a half sheet tray line it with parchment and lay eggplant slices. Spray with pam and pinch of salt. Bake for 20 minutes flipping half way.

3. Pour sauce and cheese on all slices and place back in the oven for another 6-8 minutes until bubbling.

Enjoy this yummy lunch or dinner idea with a romaine salad plus a yummy squeezed lemon with tsp of tahini paste and zaatar spice trust me you will love it!
