Almond Milk & Almond Pulp Flax Protein Bars with Peanut Butter and Carob Chips
We all think almond milk is something so difficult to make but really it's so simple and easy. Those almond milk cartons we buy sometimes I think why do we waste so much money for a water based milk? Did you know it is only 2-3 almonds in a whole carton? When using fresh almond milk as an ingredient for a recipe it only creates 10x more richness try it! Super easy to make and guess what Get a 2 in 1 recipe using leftover pulp.
Soak peeled almonds in 6 cups of water for 24 hours. Drain water and blend almonds with 6 cups of water. Strain mixture through a chinois or almond bag. Squeeze out as much as possible and use pulp for the following recipe below.
Yields : 14 bars
2 cups almond pulp
Tbsp flax meal mixed with 3 tbsp of water
1/4 cup maple syrup
Half cup crunchy peanut butter
1 oz carob chips
Mix all ingredients well until peanut butter is blended in well.
Spread mixture on a parchment paper into a rectangular shape 8 by 8 by one inch. Freeze for an hour and then cut into 14 pieces.
