Carob Chip Spelt Cookies


Ingredients:

1 cup sprouted spelt flour

3/4 cup coconut sugar

2 tablespoons ground flax meal

1/2 teaspoon baking soda

2 tablespoons ground cinnamon

1/2 teaspoon kosher salt

6 tbsp melted refined coconut oil

1/4 cup unsweetened applesauce

1 tablespoon vanilla extract

1/4 cup carob chips

Directions:

Preheat oven to 350f and spray a parchment paper.

Whisk all dry ingredients and then add wet ingredients. Slowly fold in the carob chips at the end. Dollopa tbsp of cookie dough mixture into a ball onto parchment paper. Bake for 20 minutes on the middle rack. I left my longer for crunchiness on the outside. Enjoy!
